2016 NEWTON UNFILTERED CABERNET SAUVIGNON
Newton meticulously combines fruit from three of Napa Valley’s most idyllic regions including Spring Mountain, Mt Veeder and Yountville, and then breaks each location down to a collection of highly-individualistic vineyard blocks for their unfiltered Cabernet. They select each individual vineyard block by their unique soil type, sun exposures and microclimate, and then they carefully patch everything together in order to create a wine that embodies the essence of premium Napa Cabernet. Their 2016 Unfiltered Cabernet has stunning definition, profound elegance and classic Napa Valley depth. The winery also produces a collection of single-vineyard Cabernets which go for around $210 per bottle, and at under $50, their 2016 Unfiltered Cabernet is a fantastic value.
It all starts in the vineyard, but it doesn’t end there… After night-picking, and hand-sorting the fruit, the grapes are sent through an optical sorter which inspects each individual berry to ensure perfect, uniform ripeness. For added structure and complexity the wine is fermented on the skins for up to 20 days before being pressed and then aged for 14 months in French oak. The 2016 checks in at just over 85% Cabernet Sauvignon, and is enriched with Petit Verdot, Merlot and Cabernet Franc. If you love absolutely classic Napa Valley Cabernet, I highly recommend adding some of this to your cellar.
